That's because default mouse controls in Arma are utterly stupid. Switch your mouse control to cyclic forward, cyclic back,cyclic left and cyclic right. Set W & S for collective raise and collective lower. Set A & D for pedal left and pedal right. Here's a video of flying with those controls:
